Shake the vodka, peach nectar together in cracked ice, pour the chambord into a martini glass then strain the chilled vodka into the glass. Top with Champagne. Serve with a couple floating raspberries.
Bellini is a champagne drink that originated in Harry’s Bar in Venice. This is a twist that makes it a sophisticated cocktail with a punch. Peach nectar is really the essence of the peach. It can be made by pureeing peaches, (especially white peaches) and straining out the pulp.
