Skewer the tails of 2 large prawns to keep them from curling up on the grill. Dip them in the “moist rub” below. Grill for 3 minutes on each side. Top with mango salsa.
Moist rub: 2 lemons 4 oz vegetable oil 1 T sesame oil 1 branch rosemary crushed red peppers kosher salt 1 t ftesh grated ginger 1 oz sweet Thai chili sauce
Mango salsa: 1 mango diced sections of 1 orange diced 1 red pepper diced 1 small red onion diced 2 scallions diced 1 small sprig of cilantro minced 1 T chopped chives 1 T rice wine vinegar 1 oz mirin
