sauté the onions in a little butter over medium-high heat until they’re soft and caramelized. Add the chopped green stalks of the ramps and let sauté ‘til soft. Spread the onions and ramps into the bottom of a pre-baked 12” pastry shell (savory-not sweet) for the filling: mix the cream cheese with a paddle ‘til smooth and soft. Add the eggs one at a time then the goat cheese and then the cream. Mix ‘til smooth and pourable. Add the herbs and seasoning. Pour over the onion mixture and bake for 15 minutes. Yields 12 1” portions
